Ready to Bake Socca Batter with Whipped Feta and Tomato Confit

Stovetop & Oven: Socca is a French flatbread made from ground chickpeas, so its loaded with protein and fiber! We are pairing it with whipped feta and oven roasted tomatoes with garlic and olive oil. Start by pre-heating your cast iron pan in a 400 degree pre-heated oven for 10 minutes. Pull pan out of the oven and add two tablespoons of oil and a 1/2 cup of batter and pour into your heated pan. Let the batter cook in your cast iron for 10 minutes for a chewier Socca or 15-20 minutes for a crispier Socca. Pull the toppings out of the fridge and bring to room temperature. Serve and enjoy!
