In a saute pan over medium heat, add oil or butter of your choice. Then add the butternut squash and sweet potato hash with mushrooms and saute until heated through- for crispy hash add chicken sausage and allow to sit in the pan for a few extra minutes with out flipping. Once heated through, add baby spinach and stir until incorporated and baby spinach has wilted a bit. Top with rosemary-tahini and serve with eggs your way!

Roasted Rainbow Carrot and Lentil Salad with Brown Butter Lemon Vinaigrette

Place a sautee pan over medium heat, once warm add carrots and cook until warmed through, then remove to a plate. In the same pan add in brown butter vinaigrette. Add your lentils to the warm dressing and stir for a minute or two until warmed though. Plate warmed lentils and carrots with radicchio and add herbs and top with crunchy almonds.
Optional: Sear radicchio in a hot sautee pan with a teaspoon of olive oil (or a bit of dressing) on both sides for a fully warm salad!

Korean Japchae Noodles with Gochujang Broth

In a pan, add the Noodles, Charred Kale and Gochujang broth (and Pork if included) and bring to a simmer. Cook over medium heat for about five minutes or until heated through and broth is infused into noodles. Plate noodles and garnish with green onion and cilantro.

Pre-heat oven to 375F (convection preferred). Place chicken on an oven safe dish, top with slices of mozzarella followed by tomato confit. Roast for 15-20 minutes until chicken is heated through and cheese is melted. Transfer to a plate with the polenta style of your choice. Sprinkle basil on top and enjoy!
Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency.
Baked Polenta: Place polenta portions on an oven safe dish lined with parchment. Bake at 375F (convection preferred) for 15-20 minutes until heated through.
