Stovetop and Oven: Socca is a French flatbread made from ground chickpeas, so its loaded with protein and fiber! We are pairing it with whipped feta and oven roasted tomatoes with garlic and olive oil. Start it on the stove by pouring a half a cup of ready made batter into a non-stick pan (preferably cast-iron). Add two tbsp of olive oil to your pre-heated pan and pour the batter evenly on your hot surface. Finish it in a pre-heated 400 degree oven for about 5-7 minutes for a warm and delicious anytime meal.
