Heirloom Beans & Shredded Romaine Salad with a Creamy Farmstead Cheese Dressing
Best within four to five days. We love these blissful beans from Rancho Gordo — this week we are using beautiful Scarlet Runner Beans and creamy White Runner Beans. We start by soaking the beans overnight (to aid in digestion) and then slow simmer them to creamy perfection with bay and garlic. The tender beans are dressed in garlic-infused olive oil and local Point Reyes Farmstead Blue Cheese. A "farmstead cheese" is made from the milk of animals who live on the property where the cheese is made. To finish, we top the salad with Italian parsley and sprouted walnuts. Pad Thai Salad with Quinoa and Crunchy Almonds
Best within four days. Can be enjoyed cold or hot- Preheat cast iron pan over medium heat with a little oil. Add vegetables and saute for three minutes or until desired texture. Season with a little salt if needed. In a bowl, drop a decent portion of the almond butter sauce and spread it around the bottom of the bowl- add cold quinoa and top with cooked vegetables and fresh herb.
