Heat a pan over high heat and add the kimchi, cooking until lightly caramelized. Stir in the rice and let it crisp slightly as it heats through, then add the savory fried rice sauce and mix well to coat. If included, add the lemongrass chicken and cook until heated through. Portion into bowls, top with green onions, and enjoy!

Chicken Marbella with Creamy Polenta

Preheat Oven to 400. Place chicken in an oven safe dish, cover and bake for 15- 20 minutes until heated through. Remove cover or lid and pour the marbella sauce over the top of the chicken, bake for another five minutes without lid. Finely chop parsley salad and garnish over the top of the chicken. Serve alongside polenta.

Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency.

Griddled Polenta: Heat a non-stick pan over medium heat- add a little oil or fat of your choice and place polenta down on the hot pan. Gently move polenta around so the oil gets underneath. Griddle for 10 minutes or until the polenta is crispy and golden brown. Watch your heat because the polenta can burn!

Preheat Oven to 350. In an oven safe dish, add mashed potatoes to the one side and place loaf to the other side. Cover and bake for 15 minutes until heated through, remove from the lid turn oven to broil. Finish baking for 5-8 minutes or until you get a little color on the top of the loaf and potatoes. Remove from oven, plate with tangy tahini sauce and enjoy!
