In a saute pan over medium heat, add oil or butter of your choice. Remove romaine, cilantro and feta from the top of the packaging. Heat saute pan over medium-high heat, add a little oil or butter of your choosing and add pork or cauliflower, rice and black beans. Saute until heated through, about 5 minutes. Pre-heat oven to 375F (convection preferred). Place chicken on an oven safe dish, top with slices of mozzarella followed by tomato confit. Roast for 15-20 minutes until chicken is heated through and cheese is melted. Transfer to a plate with the polenta style of your choice. Sprinkle basil on top and enjoy!
Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency.
Baked Polenta: Place polenta portions on an oven safe dish lined with parchment. Bake at 375F (convection preferred) for 15-20 minutes until heated through.
