Thai Peanut Noodles with Fresh Herbs

Bring a pot of water to a rapid boil, add noodles and reduce to a simmer. Cook noodles for 5-7 minutes. While the noodles are cooking, heat a pan over medium heat and add a little oil or butter of your choosing. Sear tofu or chicken on both sides to heat through, add one tablespoon of water and cover with a lid to lightly steam. Once water has evaporated, remove from the pan and set aside. Once your noodles are done, strain water and place noodles in a bowl. Pour peanut sauce over the top and garnish with herbs, fresh peppers, cucumber, tofu or chicken and crushed peanuts. Finish with a squeeze of lime and enjoy.
