Grilled Rosemary Dijon Chicken with Polenta and Tarragon Cream

Pre-heat oven to 375F (convection preferred). Place chicken in an oven safe dish alongside carrots and polenta squares (if baking polenta). Roast for about 15-20 minutes until chicken is heated through. Pour sauce into a small pan and heat over low heat until simmering Transfer to a plate with the carrots and polenta style of your choice. Drizzle tarragon sauce over the chicken and top with a sprinkle of parsley.
Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency.

BBQ Chicken with Cornbread and Dilly Slaw

Pre-heat oven to 350F.. Place chicken in an oven-safe dish and bake for about 10 minutes. Pull out the dish and add cornbread and continue to cook until chicken is warmed through and cornbread is lightly toasted (another 5-10 minutes).
