Pre-heat oven to 375F (convection preferred). Place chicken in an oven safe dish alongside carrots and polenta squares (if baking polenta). Roast for about 15-20 minutes until chicken is heated through. Pour sauce into a small pan and heat over low heat until simmering Transfer to a plate with the carrots and polenta style of your choice. Drizzle tarragon sauce over the chicken and top with a sprinkle of parsley.
Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c).
