Preheat Oven to 400. Place chicken in an oven safe dish, cover and bake for 15- 20 minutes until heated through. Remove cover or lid and pour the marbella sauce over the top of the chicken, bake for another five minutes without lid. Finely chop parsley salad and garnish over the top of the chicken. Serve alongside polenta.
Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency.
Baked Polenta: Place Polenta squares in an oven safe dish, preferably lined with parchment. Bake at 400 for 10-15 minutes until warmed through and a little crisp on top.
