Sweet Potato and Leek Frittata

Oven: Place in a pre-heated 350 degree oven on a parchment lined tray. Warm for about ten minutes till brown and crispy around the edges. Serve with mixed greens with a squeeze of lemon.

Miso Bok Choy Ramen

Stovetop: If you choose to add noodles…Bring a small pot of water to boil. Season and cook noodles for a couple minutes. Pull from heat and rinse while still a bit firm to prevent over cooking in broth. Meanwhile or in the same pot, bring soup to a light simmer. Rinse noodles again and then poor over noodles. Great with a fried egg on top!

Stovetop and Oven: Socca is a French flatbread made from ground chickpeas, so its loaded with protein and fiber! We are pairing it with whipped feta and oven roasted tomatoes with garlic and olive oil. Start it on the stove by pouring a half a cup of ready made batter into a non-stick pan (preferably cast-iron). Add two tbsp of olive oil to your pre-heated pan and pour the batter evenly on your hot surface.
