Mushroom and Chive Soup With Cashew Cream

In a saucepan, heat on medium low for 5 minutes or until heated through. Top with parsley and serve alongside the tuna lettuce wraps.


Black Bean and Mango Salad with Sprouts and a Cumin-Lime Dressing

Enjoy cold or at room temperature. Pairs wonderfully with chicken or fish, or simply enjoy on its own. Squeeze a little lime juice and finish with some chopped cilantro and avocado for extra brightness. This salad is also delicious served on top of sprouted brown rice or quinoa.


Peanut Lime Slaw

Shake or stir dressing and toss with cabbage and peanuts. Serve with the Mushroom and Chive Soup for a meal that’s earthy, bright and deeply satisfying!


Zucchini Noodles  with Parmesan, Pine Nuts, and Lemon

Stir or shake dressing vigorously, dress and toss salad and serve immediately. We love this summer salad with a protein for a complete meal!

Spinach, Rosemary Potato and Caramelized Onion Frittata with Pesto and Feta

In an ovenproof dish, heat in oven or toaster oven for 5-7 minutes at 350F.  The frittata can also be heated on the stovetop on medium heat for 3-5 minutes each side.


Vegan Basil and Cilantro Pesto

Use as a spread on sandwiches, meat/seafood, or on roasted veggies.  Delicious with the Frittata and the bread.


5 fun ways to use pesto:

  1. Throw it in a scramble!

Mix it in with a few free-range eggs, some seasonal veggies, (asparagus, snap peas, cherry tomatoes, etc.), crumbled feta cheese, and top with some avocado.

  1. Vamp up your chicken salad.

Stir in with your chicken salad base to liven it up a bit.

  1. Dollop over some roasted vegetables.

We love it over roasted sweet potatoes, carrots, asparagus and broccoli.

  1. Use as a base for pizza.

Throw on some mozzarella and cherry tomatoes. Top with a drizzle of balsamic reduction when it’s hot out of the oven.

  1. Dress up your cheese plate!

Put in a dish among some fine cheeses, crackers, other accouterments and serve with wine. Your friends will love it.


Sprouted Oat and Seed Bread with Black Pepper and Sesame Seeds

Refrigerate if storing more than 2 days. Serve at room temp or warm/toasted with ghee or any of your favorite dips or spreads. We love it with the pesto!

Store in airtight container if keeping more than 2 days. Enjoy at room temp as an anytime snack, or go crazy and pop them in a toaster oven at 350 for 3-4 minutes and top with a scoop of vanilla ice cream!
