Thai Red Lentil Soup with Lemongrass and Ginger

In a saucepan, heat on medium low for 5 minutes or until heated through. Avoid bringing to a boil as coconut milk is delicate.  Top with some fresh cilantro, and serve with peppery greens dressed in a light vinaigrette. Pairs well with the Golden Beet Salad!

 

Chickpea, Mango, Jalapeño and Curried Cauliflower Salad with Hazelnuts

Best eaten within the first 2 days of receiving. Best enjoyed cold or at room temperature. We love this salad with the Lemongrass Coconut Chicken Soup! Also makes a lovely lunch salad.

 

Golden Beet and Green Onion Slaw with Roasted Peanuts

Eat cold or at room temperature. Pairs well with chicken or fish, or simply enjoy on its own. Squeeze a little lime juice for extra brightness.

 

Sesame Miso Brown Rice with Sauteed Spring Vegetables

Serve warm or at room temperature. Add to saucepan and heat for 5 minutes on medium low heat or heat in 350F oven for 5 minutes. Serve with the Lemongrass Coconut Soup, a nice piece of fish or chicken, or simply enjoy on its own.

In a saucepan, heat on medium low for 5 minutes or until heated through. Avoid bringing to a boil as coconut milk is delicate. Serve with the Sesame Miso Brown Rice with Sauteed Spring Vegetables.

 

Cornbread Frittata with Jalapeno & Sriracha Roasted Cauliflower

In an ovenproof dish, heat for 5-7 minutes at 350F. Or use a toaster oven at 350F for 5-8 minutes. (Our favorite method!) Serve with greens tossed in a bright vinaigrette, and top with some avocado and flaky sea salt.

 

 Vanilla & Chocolate Coconut Truffles

If keeping for more than 5 days, refrigerate in an airtight container. Best to bring them to room temperature before enjoying. Bring them with you! They make a great, brain-boosting snack on the go!

 

Sweet and Savory Sprouted Cashew Butter

Store in fridge for up to 2 weeks. Serve with Nut & Seed Bread, fruits such as apples or bananas, use in smoothies, or just eat plain. We especially love this spread on our Oat and Seed Bread!

 

Cinnamon and Raisin Oat & Seed Bread

Must try it with the cashew butter! refrigerate in an airtight container if storing more than 2 days. Serve at room temp or warm/toasted with ghee or nut butter, or any of your favorite dips or spreads.
